UGANDAN RICE BALLS - KAMPALA SANCTUARY RECIPE

Ugandan Rice Balls, also known as Namungodi, are a delicious and savory Ugandan cuisine made with rice, potatoes, and veggies that give an exotic and incredible flavor.

INGREDIENTS

  • 3 cups short grained rice

  • 3 medium Irish potatoes, boiled

  • 1 tbsp water

  • 2 eggs

  • 1 cup of flour

  • 1 green pepper, finely chopped

  • 1 onion, finely chopped

  • 1 tsp ground ginger

  • 2 garlic cloves, finely chopped

  • Salt

  • Chilli flakes (optional)

  • Oil for frying

DIRECTIONS

  1. Cook the rice in a rice cooker or boil in a pot, once cooked add to a bowl and fluff with a fork

  2. In the same rice bowl, add the chopped green pepper, onions, ground ginger, and garlic. Mix well and set aside.

  3. Boil the Irish potatoes until fork tender.

  4. Mash the potatoes and add the tablespoon of water.

  5. Add the mashed potatoes to the rice mixture, the mashed potatoes act as a binder.

  6. Mix in the salt and chilli flakes.

  7. In a separate bowl, whisk the eggs together.

  8. Using your hands, form bite-sized balls of the rice and potato mixture and dip them in the egg mix one by one.

  9. Add flour to another bowl and dip the egg coated ball in the flour until they are fully covered.

  10. Fry the balls in a pan with oil until golden brown. The result is a super crunchy exterior and a flavorful interior.

  11. Serve with your favorite dipping sauce and enjoy!
