KABALAGALA - KAMPALA SANCTUARY RECIPE
Kabalagala, also known as kabas, are traditional Ugandan deep fried banana pancakes. Yummy right? Check out this recipe!
INGREDIENTS
3 cups cassava flour
6 sweet ripe bananas
1 tsp salt (optional)
1 tsp sugar (optional)
1/4 tsp baking powder
Vegetable oil for deep frying
1/4 cup icing sugar (optional)
1/2 cup water for mixing the dough
DIRECTIONS
Peel the bananas and mash them in a large bowl
Sift flour in small portions into the mashed bananas and mix continuously with portions of water until the dough is thick and not sticky.
Add the baking powder, salt & sugar and continue mixing.
Dust your clean worktop or cutting board with some flour and knead the dough, please note that it shouldn’t be sticky.
Roll it out with a rolling pin into about 1/4” thick circles.
Using a cup (the size of this cutter will guide on how big you want the pancakes to be), cut out your preferred shape of discs.
Gather up the remaining dough and roll out again and cut. Repeat this process until all the dough has been used up.
Heat oil in a wok or deep frying pan over medium heat.
You should be able to tell whether your oil is ready if a small piece of dough put in the oil rises up to the top immediately.
Fry the pancakes until they are golden brown.
Dust some icing sugar on the pancakes and enjoy!
RECOMMENDATIONS:
Adding of sugar and salt isn’t really necessary as the bananas are extremely sweet and you will small and taste the flavour throughout you entire meal.
Cinnamon is a good addition to this recipe.
