PAV BHAJI - MUMBAI SANCTUARY RECIPE

Pav Bhaji is a delicious and hearty blend of spicy vegetables enjoyed with dinner rolls or bread.

INGREDIENTS

  • 2 medium potatoes 

  • ½ cup green peas

  • ¾ cup cauliflower, chopped

  • ½ cup carrot, chopped

  • 1 large onion, chopped

  • 1 tbsp ginger garlic paste

  • 2 medium tomatoes, chopped

  • ½ cup capcicum

  • 1½ tsp red chili powder

  • ¼ tsp turmeric powder

  • 1 tsp cumin-coriander powder

  • 1 tsp ready-made pav bhaji masala powder

  • Salt to taste

  • 2 tsp oil

  • 2 tsp butter

  • 2 tbsp coriander leaves, finely chopped

  • Buns or bread for serving

PREPARATION

  1. Chop up potatoes, cauliflower, carrots, and peas.

  2. Transfer chopped vegetables to a pressure cooker or boil them in a pan.

  3. Add ½ cup water and salt to taste and cook over medium heat.

  4. Mash the boiled vegetables gently with a potato masher.

DIRECTIONS

  1. In a pan, heat 1 tsp butter and oil over medium heat.

  2. Add chopped onions and saute until they turn translucent.

  3. Add ginger and garlic paste and fry until fragrant.

  4. Add ½ cup chopped capcicum and fry for 2 to 3 minutes.

  5. Add chopped tomatoes and 1 tsp salt and fry until tomatoes turn mushy, soft, and pulpy.

  6. Add chili powder and 1 to 1½ tsp of pav bhaji masala powder.

  7. Mix well and fry for 2 to 3 minutes.

  8. Add all the mashed veggies and mix to bring a thick consistency.

  9. Serve with bread or buns, garnish with coriander leaves, finely chopped onion, tomatoes (optional) or add lemon drops (optional).

  10. Enjoy!
