KUMAONI RAITA - MUMBAI SANCTUARY RECIPE

Kumaoni Raita is a delicious Indian cuisine. It’s spicy, tangy, and full of flavors. Cucumber raita is an excellent gluten-free and 100% vegetarian Indian side-dish.

INGREDIENTS

  • 1lb curd/yogurt (unflavored)

  • 1 cucumber, grated

  • 1 pinch Turmeric powder

  • 1 tsp roasted cumin powder

  • ½ tsp mustard seeds

  • 1 cup coriander leaves (cilantro)

  • 2 garlic cloves

  • 2 chopped green chilis

  • 1 tsp salt or as per taste

DIRECTIONS

  1. Put the curd in a large mixing bowl, set aside.

  2. Take mustard seeds, garlic cloves, coriander (cilantro) and green chilis in a mortar and pestle or grind them together in a mixer. Pound into a smooth paste.

  3. Add the paste mixture and all the other ingredients - salt, turmeric powder, and cumin powder in the large mixing bowl with the curd and mix it well.

  4. After mixing all of the ingredients together, stir in the grated cucumber. Mix well and set aside for some time to settle down. Serve chilled!
