ENCHILADAS DE MOLE CON POLLO - TIJUANA SANCTUARY RECIPE

Enchiladas de Mole con Pollo is a flavorful Mexican cuisine made with juicy chicken and covered in mole sauce.

INGREDIENTS

  • 4 ½ cups chicken broth

  • 1 cup vegetable oil

  • 12 tortillas

  • 2 cups cooked and shredded chicken

  • 1 cup cream

  • 1 cup crumbled fresh cheese

  • ½ cup sliced onion

  • 1 cup red mole paste

DIRECTIONS

  1. Heat oil in a pan, fry the tortillas lightly; set aside on absorbent paper.

  2. In a pot, add chicken broth and bring to a boil.

  3. Add in the mole paste to the chicken broth until fully dissolved.

  4. Heat the shredded chicken in another pan.

  5. Dip each tortilla in the mole then place some chicken in the center of each tortilla and roll up.

  6. We suggest serving three enchiladas per serving.

  7. Garnish with cream, cheese and onion. Serve immediately.
