MANDAZI - KAMPALA SANCTUARY RECIPE
Mandazi is an East African doughnut snack that is soft, light, and fluffy! Enjoy them in the morning, evening, or as a mid-day pick me up with a cup of tea or coffee. Serve with honey or jam and enjoy.
INGREDIENTS
3 cups all-purpose flour, plus more for dusting
½ cup sugar
1 ½ teaspoons baking powder
2 teaspoons ground cardamom
1 egg, beaten
13 ½ oz coconut milk/other milk
Cooking oil, for frying
DIRECTIONS
In a large bowl whisk together the flour, sugar, baking powder, cardamom, and salt. Make a well in the center, then use a rubber spatula to mix in the egg and coconut milk until the dough comes together.
Create a ball with the dough and sprinkle lightly with flour. This is to make sure the dough doesn’t stick to the surface when you’re rolling it out.
Turn the dough out onto a floured surface and knead until smooth. Divide the dough into 4 portions. Roll out 1 portion of dough into a circle about ¼-inch thick. Cut into 8 triangles. Repeat with the remaining dough portions.
Pour oil into a frying pan (the pan should be fairly deep) and set it to medium-high heat.
Once the oil is hot, put the slices of dough into the oil. Let it simmer on each side for about a minute or so, turning the dough a total of three times.Drain on paper towels.
Serve as breakfast or a snack with coffee or chai.
