BHINDI BHAJI - MUMBAI SANCTUARY RECIPE

Bhindi Bhaji is a popular and delicious Indian recipe loved by many. This dish is rich with exceptional textures and flavor that can be served as a side dish with lunch or dinner alongside another Indian main dish.

INGREDIENTS

  • 1/2 lb Okra (Bhindi), washed and chopped

  • 1/2 tsp red chili powder

  • 1 tsp coriander powder

  • 1 tbsp coriander leaves (cilantro)

  • 3 garlic cloves, minced

  • 1 tomato, chopped

  • 1/4 tsp garam masala powder

  • 1 tsp salt

  • 1/4 tsp turmeric powder

  • 1-2 tbsp cooking oil

  • 1/2 tsp cumin seeds

DIRECTIONS

  1. Wash okra in water and dry it. Remove head and chop into pieces.

  2. Heat oil in a pan over medium/high heat.

  3. Add in cumin seeds and fry until they begin to crackle, add minced garlic. Saute for 30 seconds.

  4. Add chopped okra and mix well.

  5. Cook on medium-low flame until okra turns dark green. It will take about 6-8 minutes. Stir in between occasionally.

  6. Add chopped tomatoes, turmeric powder and salt. Cook for about 2 minutes or until tomatoes are tender.

  7. Add in red chili powder, garam masala powder and coriander powder.

  8. Mix well and cook for 1-2 minutes.

  9. Transfer prepared Bhindi Bhaji to a serving bowl and garnish with coriander leaves.

  10. Eat with roti, chapati naan, or paratha and enjoy!
