BHINDI BHAJI - MUMBAI SANCTUARY RECIPE
Bhindi Bhaji is a popular and delicious Indian recipe loved by many. This dish is rich with exceptional textures and flavor that can be served as a side dish with lunch or dinner alongside another Indian main dish.
INGREDIENTS
1/2 lb Okra (Bhindi), washed and chopped
1/2 tsp red chili powder
1 tsp coriander powder
1 tbsp coriander leaves (cilantro)
3 garlic cloves, minced
1 tomato, chopped
1/4 tsp garam masala powder
1 tsp salt
1/4 tsp turmeric powder
1-2 tbsp cooking oil
1/2 tsp cumin seeds
DIRECTIONS
Wash okra in water and dry it. Remove head and chop into pieces.
Heat oil in a pan over medium/high heat.
Add in cumin seeds and fry until they begin to crackle, add minced garlic. Saute for 30 seconds.
Add chopped okra and mix well.
Cook on medium-low flame until okra turns dark green. It will take about 6-8 minutes. Stir in between occasionally.
Add chopped tomatoes, turmeric powder and salt. Cook for about 2 minutes or until tomatoes are tender.
Add in red chili powder, garam masala powder and coriander powder.
Mix well and cook for 1-2 minutes.
Transfer prepared Bhindi Bhaji to a serving bowl and garnish with coriander leaves.
Eat with roti, chapati naan, or paratha and enjoy!
