BUWAD KINAMATISAN - CEBU SANCTUARY RECIPE
Buwad Kinamatisan is a sweet & salty recipe that originated in Cebu, Philippines. It means "dried fish & tomatoes" and is loved by many!
INGREDIENTS
½ lb dried fish (Tamarong Fish)
½ lb tomatoes, sliced
2 tbsp vinegar
6 pieces red chili
3 cloves of garlic, minced
1 onion, minced
½ tbsp sugar
Cooking oil
DIRECTIONS
Fry the dried fish in a pan, once done set aside on a separate plate.
In the same pan saute the minced garlic and onion for a few minutes.
Add in the sliced tomatoes and stir and simmer, once they become soft add in the chili.
Next add the fried dried fish back in, mix well so the fish will absorb the flavor.
Add in vinegar and sugar to achieve its sweet and sour taste or adjust according to your liking or taste.
